Italian. Pizza, pasta, and other Italian foods are wildly popular all over the world. From the end of the nineteenth century until the middle of the twentieth century, many Italians left their home country and immigrated to North and South America, to Australia and New Zealand. Four million Italians went to the United States, most of them poor, most of them from Southern Italy. And of course, these immigrants brought their food traditions with them everywhere they went. 2 In the U.S., some of the dishes that are considered Italian are really the work of immigrant cooks who altered familiar dishes to include ingredients available in their new home. Few of them ate beef back in Italy, but in the United States, ground beef was everywhere, in part because an earlier wave of German immigrants introduced it. So, what did the Italian cooks do? They made meatballs! Today, spaghetti and meatballs and meatball sandwiches are among the most common “Italian” dishes. Milk was also widely available, unlike in Italy. So, they made cheese and put it on their pizza – another immigrant innovation. Today, U.S. supermarket aisles are filled with foods that have Italian labels. Yet many of them are products that someone from Italy would not recognize! They are Italian American. These foods are evidence of the multicultural heritage of the U.S. 3 Today, it is Italy that is receiving immigrants, primarily from Africa and South Asia. How do Italians feel about this increasing multiculturalism? The answer is complicated. Some Italians see this development as a threat to their national identity – and that includes their food. They are justifiably proud of their cuisine and its long history. If immigrants bring their own food and culture, how will this affect Italian culture? Some Italians mistakenly think that the newcomers’ culture and local culture cannot coexist. Such beliefs can lead to questionable responses. Food can be a way of telling people apart – of marking some of them as different. Some communities have responded to immigrants’ arrival by banning restaurants and shops selling “foreign” food. 4 Other Italians see food as a way of bringing people from different backgrounds together. They have welcomed the immigrants and their food traditions. One place in Italy experiencing a multicultural rebirth is Sicily, an island of 5 million people off the southwest coast. Immigrants have been coming to Sicily for centuries, dating back to Roman times. Recent years have brought a wave of more than 400,000 newcomers to the island, immigrants from Afghanistan, Bangladesh, Ghana, Jordan, Senegal, Zambia, and other countries in Asia, Africa, and the Middle East. And of course, the new arrivals have brought their food traditions with them. 5 Ironically, in the early twentieth century, Sicily was the origin of many Italian immigrants to other countries, like the U.S. and Australia.
